    Enter this stunning Syrian Chicken with Saffron, Ginger, and Lemon, a dish that sings with the essence of seasonal transition.

    Originally from Karen Martini’s Cooking at Home, this recipe beautifully layers traditional wisdom with a tapestry of spices and herbs that nourish the body and soul.

    Why We Turn To Warming Foods At Seasonal Change

    In both naturopathic medicine and traditional herbalism, we honour the turning of the seasons with dietary shifts:

    • Spices like cinnamon, cumin, and turmeric gently heat the body and support digestion.
    • Fresh ginger kindles the digestive fire (agni in Ayurvedic medicine), helping prevent sluggishness as the weather cools.

    Syrian Chicken With Saffron, Ginger & Lemon

    Serves 4

    INGREDIENTS

    • 2 tsp sea salt
    • 2 tsp ground cumin
    • 2 tsp ground cinnamon
    • 1 tsp cracked black pepper
    • 1 tsp turmeric
    • 1.4–1.6 kg chicken, cut into 8 pieces
    • 100ml olive oil
    • 2 brown onions, thickly sliced
    • 100g fresh ginger, cut into matchsticks
    • 5 cloves garlic, peeled and smashed
    • 2 small red chillies, split
    • 2 tomatoes, coarsely chopped
    • 2 pinches saffron threads
    • ½ tsp cumin seeds
    • 5 sprigs thyme, leaves only
    • Coarsely grated zest and juice of 1 lemon
    • 2 tbsp honey
    • 100g currants
    • 2 tbsp vegetable stock powder
    • ½ bunch coriander, leaves only

    METHOD:

    1. In a large plastic bag, combine the salt, cumin, cinnamon, pepper, and turmeric. Add the chicken and massage until beautifully coated.
    2. Heat olive oil in a heavy-based pan. Brown the chicken pieces on all sides, then remove and set aside.
    3. In the same pan, add the onions, ginger, garlic, and chilli. Cook for 3 minutes until fragrant.
    4. Add the tomatoes, saffron, cumin seeds, and thyme. Cook for a further 2 minutes.
    5. Return the chicken to the pan. Add the lemon zest, lemon juice, honey, currants, stock powder, and just enough water to barely cover the chicken.
    6. Cover with a lid and simmer over medium heat for 10 minutes.
    7. Uncover and cook for another 15 minutes or until the chicken is tender and the sauce is slightly reduced.
    8. Stir through the fresh coriander just before serving.

    To serve, spoon this golden, fragrant chicken over fluffy couscous or rice or cauliflower rice and let every mouthful be a celebration of the seasons' wise dance.
