(Recipe inspired by Karen Martini, "Cooking At Home")
As the seasons turn, the golden light stretching longer, the air shifting with a familiar coolness, and our cravings instinctively follow. We yearn for warmth. For comfort. For spices that kiss the senses awake.
It’s in this beautiful in-between, not quite summer, not yet winter, that our bodies whisper for foods that nurture and prepare us. Meals that fortify and gently stoke the fires of digestion, immunity, and resilience.
Enter this stunning Syrian Chicken with Saffron, Ginger, and Lemon, a dish that sings with the essence of seasonal transition.
Originally from Karen Martini’s Cooking at Home, this recipe beautifully layers traditional wisdom with a tapestry of spices and herbs that nourish the body and soul.
In both naturopathic medicine and traditional herbalism, we honour the turning of the seasons with dietary shifts:
Each element of this dish is a little medicinal hug, designed by nature, gifted through tradition.
Serves 4
INGREDIENTS
METHOD:
1. In a large plastic bag, combine the salt, cumin, cinnamon, pepper, and turmeric. Add the chicken and massage until beautifully coated.
2. Heat olive oil in a heavy-based pan. Brown the chicken pieces on all sides, then remove and set aside.
3. In the same pan, add the onions, ginger, garlic, and chilli. Cook for 3 minutes until fragrant.
4. Add the tomatoes, saffron, cumin seeds, and thyme. Cook for a further 2 minutes.
5. Return the chicken to the pan. Add the lemon zest, lemon juice, honey, currants, stock powder, and just enough water to barely cover the chicken.
6. Cover with a lid and simmer over medium heat for 10 minutes.
7. Uncover and cook for another 15 minutes or until the chicken is tender and the sauce is slightly reduced.
8. Stir through the fresh coriander just before serving.
To serve, spoon this golden, fragrant chicken over fluffy couscous or rice or cauliflower rice and let every mouthful be a celebration of the seasons' wise dance.
This dish isn’t just food, it’s medicine. Delicious, everyday medicine.
As the trees let go of their leaves and the earth draws inward, we, too, can take the cue to nourish ourselves more deeply. To eat seasonally, live cyclically, and honour the incredible gifts nature offers us through food, herbs, and spices.
Happy cooking, and even happier eating. May your kitchen be filled with the golden scent of spices and the soft whisper of seasonal magic.
