An easy meal protein-rich and dairy-free meal that you can whip up on an evening where you're lacking a little inspiration.

INGREDIENTS
METHOD
Bring a pan of water to boil and cook the rice according to packet instructions.
Place the chicken, garlic, onion and lemongrass in a bowl and mix well, seasoning with salt and pepper to taste.
Place the coconut oil in a wok over high heat and add chicken mixture, stir frying for a few minutes until cooked.
Add in the coconut milk and green beans and bring to the boil. Reduce heat and simmer for one minute.
Remove the lemongrass stems and serve with fresh coriander and rice.
